We clean the salmon, remove all the bones. We dry it for about 30 hours, then carefully cut it into slices. We marinate the fish in a special mix with corn oil.
And to achieve the perfect texture and flavor, we let it infuse for 4 days.
Salmonic Fusion turns out very tender, flavorful, and medium-salty.
