Dry-Aged Ocean Trout: Seven Days of Cold Air, Salt and Time

This one takes time. We start with large Norwegian ocean trout, trim it into clean sections and remove the bones by hand. Then we mix coarse salt with mezcal, cover the fish completely and leave it to cure for one to two days. After the cure is washed away, the trout goes into our dry-aging chamber for about a week at 34°F and roughly 50% humidity, with constant airflow slowly pulling moisture from the fish.

The result is completely different from ordinary cured salmon. The texture becomes dense and almost buttery, the flavor concentrates, and each slice has a clean savory finish with just a faint mineral, smoky note from the mezcal cure. No sauce, no glaze and no smoke to hide behind — just fish, salt, mezcal, cold air and time.

How We Make It

  • Norwegian ocean trout. Large, rich fish chosen for its high fat content and firm texture — exactly what you want for dry aging.
  • Boned by hand. We portion the fish into large sections and remove the bones before curing.
  • Coarse salt and mezcal cure. The salt is mixed with mezcal and packed over the entire surface of the fish.
  • Cured for one to two days. Enough time for the salt to penetrate the fish and begin firming the texture before aging.
  • Washed after curing. The excess salt is removed before the fish enters the aging chamber.
  • Dry-aged for about seven days. The fish stays at approximately 34°F and 50% humidity with continuous airflow. Moisture leaves slowly, concentrating both texture and flavor.
  • No shortcuts. No liquid smoke, no sugary glaze and no artificial flavoring. The character comes from the fish itself and the aging process.

What Dry Aging Does

Fresh fish carries a lot of water. During dry aging, some of that moisture leaves the trout while the fat and flavor stay behind. That changes both the taste and the way it feels when you eat it: firmer than conventional cured salmon, intensely savory, but still rich because ocean trout naturally carries plenty of fat.

Think of it less like ordinary smoked salmon and more like a fish charcuterie — something to slice thinly and eat slowly.

How to Eat It

Take it out of the refrigerator for fifteen to twenty minutes before slicing. Serve it thin. This is concentrated fish, so a little goes further than regular smoked salmon.

  • Thinly sliced, on its own. The best place to start. Cut across the grain and let it warm slightly before eating.
  • With dark bread and butter. Rye or sourdough, good butter and a thin slice of trout.
  • With lemon. Just a few drops — enough acidity to cut through the fat without covering the aged flavor.
  • On a charcuterie board. Serve alongside mild cheese, cornichons, olives and good bread.
  • With potatoes. Warm boiled potatoes, butter, dill and thin slices of dry-aged trout.
  • To drink. Dry sparkling wine, cold vodka or mezcal if you want to bring the cure full circle.

Keeping It

Keep refrigerated. Because this is a cured and dry-aged fish product, keep the package tightly sealed and return it to the refrigerator immediately after slicing. For the best texture and flavor, cut only what you plan to eat.

Is this smoked trout? No. There is no smoking step. The flavor comes from curing and approximately seven days of controlled dry aging.
