Truffle Salmon: Fruitwood Smoke, Finished with Black Summer Truffle

Farm-raised Atlantic salmon smoked with natural fruitwood and finished with black summer truffle. The salmon stays rich and buttery, while the truffle comes through as an earthy, savory note rather than overpowering the fish. A little brown sugar rounds out the smoke, and natural carob powder adds depth to the cure. Richer and more aromatic than classic smoked salmon, but still built around the salmon itself.

What Makes It Different

  • Black summer truffle. Real truffle adds an earthy, savory finish that works naturally with the richness of Atlantic salmon.
  • Natural truffle flavor. Used alongside black summer truffle to carry the aroma evenly through every slice.
  • Natural fruitwood smoke. A softer smoke profile that leaves room for the truffle instead of competing with it.
  • Brown sugar in the cure. Just enough sweetness to round out the salt and smoke without making the salmon taste sweet.
  • 12g of protein per serving. A 2 oz serving has 110 calories, 6g of fat and 1.1g of omega-3 fatty acids.

How to Eat It

Take it out of the refrigerator fifteen to twenty minutes before serving. As the salmon warms slightly, the fat softens and the truffle aroma becomes noticeably fuller.

  • On toasted baguette with butter. Keep it simple — good bread, cold butter and a slice of truffle salmon.
  • With soft cheese. Brie, chèvre or a mild cream cheese works without covering the truffle.
  • On its own. Serve thin slices at room temperature and let the salmon and truffle do the work.
  • With eggs. Add it to soft scrambled eggs or an omelet after cooking. Heat the eggs, not the salmon.
  • On a charcuterie board. Crackers, cornichons, mild cheese and something crisp to drink.
  • To drink. Dry sparkling wine, Champagne or a crisp white wine.

Keeping It

Keep refrigerated at 39°F or below. Once opened, keep the remaining salmon tightly sealed and refrigerated. For the best texture and aroma, take out only what you plan to serve and return the rest to the refrigerator.
